No. Koi hears you only while you hold its keys. Dictation listens only after you tap its keys, and the island in the notch shows whenever the microphone is on.

Dictation does, fully. Koi needs the internet: its models don't fit on a laptop.
Your voice, while the call lasts. A picture of your screen goes with each question, unless you switch it to only when you ask, or never. Selected text goes only when you ask Koi to work on it. Nothing said, shown or written is stored.
Yes, and it's only an email address: a code sent to it, or Google. No password. Your dictation and pages still stay on your Mac.
The microphone to hear you, Accessibility to type into other apps, and Screen Recording so Koi can see your screen and record calls. Calendars, Reminders and Automation only when something you ask Koi needs them.
